Len,

Rainbow Bee eaters we see here are usually catching bees & insects quite
high up(~500 feet up or so). Early Morning & late afternoon is their best
time. Usually, when there are a few perched in the trees, there will be
quite a number doing aerobatic displays high above, and making that lovely
sound.
They are a social nester, as I recall, and so move around in large family
groups. They make burrows in earthern banks for nests.

Havent seen then eating dog poop, but there might be something in in they
are supplementing their diet with. OR, they like the taste of old dog-poop!

Arent they a pretty bird?

Cheers,

Perhaps it was picking out fly larvae or dung beetles? These decomposers
have been introduced to some suburban parks for the specific purpose of
giving a speedy burial to dog poop.
