Default Bamboo as a low screen

I want to use bamboo instead of a fence at the bottom of my garden in
Melbourne, Australia. It's an 18m (60') width and I don't really want the
screen to be more than 3m (10') high.

Many of the types of bamboo I've seen that appeal to me appear to grow to
20m plus. How difficult is it to keep the height down, and how often would
I have to prune?
