I know it's too late this year but I am looking for a certain variety
of sunflower. The kind I'm looking for is more like a large bush with
several miniature sunflowers rather just a central stalk with one
flower on the end.

There are several perennial sunflowers (genus Helianthus) with clusters
of small daisy-like flowers.

Additionally, there are some varieties of annual sunflowers (H. annuus)
with flowers smaller than the common sunflower but larger than some of
the perennial species. Among the latter are 'Del Sol', 'Indian
Blanket', 'Italian White', 'Lemon Eclair', and 'Moonshadow', all of
which might make a mess as cut flowers because they shed pollen. Also
in H. annuus are 'Cinnamon Sun', 'Bright Bandolier', 'Prado Red',
'Valentine', and 'Velvet Queen', which do not shed pollen.

I like Torch a Mexican sunflower. Not only a great flower to see but
the stalk is soft and sensual. Hummers and butterflies like it too.
