Default Flourish Excel as carbon source

if I remove the bagged carbon from my canister filters then what should I
put in there?

I would use one of the inert media sold for filters, that are meant to grow
bacteria colonies. Ceramic rings, bio-balls, pieces of sponge, etc. You can
also buy various sizes of mesh bag to put it in, if your filter requires it.
(Personally, I have an Eheim, and I use their media -- ceramic rings on the
first layer, a gravel-looking media on the others. My other tank has an
Aquaclear, and I two foam inserts, instead of the foam, carbon bag, and
ammonia-removing bag it comes with.)

If you replace the carbon, do it gradually, one bag at a time. Part of your
biological filter may be living in the carbon.

Also it seems that when I add fertalizer I get VERy rapid
algae grown, like the rough green stuff shows up on my glass overnight
almost.

You may not have this problem with a more complete fertlizer, like TMG.
FloraPride has only potassium and iron. If your plants don't have all the
nutrients they need, they can't make use of the FloraPride, and the algae will.
