Default Espalier

I'd like to espalier a mandarin. Is this a suitable plant - and are
there preferred varieties

Get an imperial mandarin on a good rootstock which means grafted. Then just
keep pruning so you get the fan shape. You also have the option of a dwarf
rootstock which will give a more compact tree which will grow to 2m.
