To me willow is real bonsai and an "instant" one as you say. Try to find
a thick branch, maybe 3" with good taper and movement. Cut of all
branches from your potential trunk. Let new shoots grow free all summer
but wire them down in arches. Cut back to a few nodes in fall and repeat
every year. When you´re satisfied with the branch structure you can cut
back the whole shoot every year replacing it with a new one. You can use
potting soil in your mix for Willow.
