Pruning Elms

I have several elms that I dug up over a year ago.
The trees are still dormant, so I was thinking about cutting them back very
hard, maybe leaving
one but pre-branch, to get more branches and start the tree's form .
Would this be the correct procedure?

Chinese elms can be serverely cut back and will break back even on old trunk
wood. I cut mine just as I see just a bit of bud swell and it works well
