Default "Hardening" potatoes


Have always heard that you are supposed to "harden off" pieces
of cut potato w/eye before planting.

Is this true? If so, why?

Let the cut surface dry for a day or two and the potatoes won't rot.
Fresh cut surface in the wet ground will rot.

The other term is "suberize"
It forms a callous which seals the tissue from decay.
