Well, just kind of split the difference. I'm in sort of the same
situation. Either 5A or 5B depending on which map I look at. It's all
very much guesswork anyhow depending on the weather during any given
year. Just use the maps as guidelines and most years you'll be fine.

when do you harvest garlic?
 
I am in Kansas (zone 5) and used to live in Arkansas (zone 7). In both
places I let the garlic send up the seed pods, cut them off , while quite
immature, and used them in cooking.

Then I gave the garlic another few weeks (until the leaves start browning on
the ends (normally August), and dig it all up. I wash them off, cut the
stems off leaving about 4 to 6 inches on the garlic head. Then I let them
lay inside somewhere out of the sun to day for about 10 to 15 days.

Then I put them inside hung up or inside a paper bag in a cool room. About
Sept 15 to 30, I split as many heads as I need to plant my next years crop.

I plant the big cloves and use the smaller ones. They come up just in time
for winter to hit them, but they stay green all winter and renew my crop.

I realize all of you knew this, but it may help someone just starting to
grow garlic for the first time. Mine may not be the only way to do it, so
please share your experiences with us.

Where are the main maps? The one I found didn't have those B's and
A's. We get winter frosts of -3 to -5 at the most.
