won't sulfate be bad? (change into something toxic?) or do they also get
eaten up by the plants?

btw, do either chemicals (KNO3 and/or KSO4) change pH?

As long as you do regular water changes the SO4 won't hurt a thing.
In fact it's pretty hard to make it toxic. And neither one will
change the pH if you get high quality stuff.
