Default What is this plant / veg??

Hi, please can someone identify this plant, its growing in a deep bed in my garden (just moved into property) and had a PH/moisture detector in the ground, these plants have grown big in 1 month, leaves approx 45cm long, spiky, and collects water around the stem

Looks like lettuce that's "bolted", ie it failed to develop a proper
head. Several reasons for that, google will find more info for you.
Bolted lettuce tastes bitter.

Looks to me like 'Teasle'.
If you where to leave it, you'd be rewarded with a thistle like flower , with small purple flowers.
These can be dried and used for decoration in vases and flower arranging.
