what is the proper method for trimming holly bushes that have spread out,
rather than up? Also, What time of year is best?

Well if it has berries on it in the winter then prune it just before xmas
and use for decorations

Not knowing where you are or what hollies you're talking about, I can offer
some general advice. Prune before the new growth appears. On the tall
growers, make big, few, judicious cuts. On the small growers, you can shear
them like a hedge. Here in South Carolina, there's not too much you can do
wrong to a holly, any kind. They're very forgiving. give them a good
fertilizing once you see new growth.
