Squirrel Soup
We have an over-abundance of pesky squirrels. Here's a delicious
winter soup... In the morning wash and quarter 3 or 4 squirrels, place in a pot with 1 gallon cold water and 1 tablespoon salt. Cover and simmer gently. Add vegetables (potatoes, carrots, onions, corn, tomatoes, beans, etc.) After the meat has boiled to shreds, put the soap mixture though a coarse colander to rid the soup of the tiny bones. Return the mix to the pot and simmer. Stir in a tablespoon of butter and a tablespoon of flour. Add a chopped celery stalk and some parsley. Enjoy. |
