Grass Seed Shelf Life
 
Does anybody have any idea on what the shelf life of grass seed stored in
the sealed, original bag is?

If it is completely dry and not exposed to extreme temperatures, it
will be good for at least a few thousand years.

That's not true. The germination rate of seed declines over time,
which is why the date the lot was tested is important. Typical grass
seeds can be stored a couple of years in a cool, dry place and still
have acceptable germination rates. Anything over a year old, I'd do
a test prior to use to make sure the germination rate is acceptable.
Also, endophyte enhanced seed loses the endophyte protection in a much
shorter time, less than a year.

I used some dated year 2000 in an opened bag a couple weeks ago.
It is now growing well.
