Wanted: Pickle recipes
Hi all,
We've got an overabundance of cukes this year, and so I've been trying various pickle recipes. I haven't found one we **really** like yet, so I was hoping maybe someone out there has a favorite recipe they'd like to share...?! I'm especially interested in the following types: bread & butter, sweet, and dill. Also, if anyone has a recipe for pickled watermelon rind, I'd be ever-so-grateful. Our great grandmother used to make it, but no one ever thought to write down her recipe. And yep, I did google pickle recipes, but there are soooo many out there - and with variable results. Wanted: Pickle recipes
I've made my own pickles severals times and they either turned out mushy or
tasting like gasoline.But I did eventually make an outstanding batch of Bread and Butter and the recipe I used came off the back off the can of the pickeling lime I used.Don't laugh but the brand was Astor which is Winn Dixies in store brand. I use this recipe from Alton Brown for my pickling cukes. Works great. Don't
know how to describe them, but you seem to know enough about pickles to judge for yourself from the recipe ingredients: 1C Water 1C Cider Vinegar 1/2C Champagne Vinegar (I've subst more cider since this is hard to find) 1/2C Sugar 2T Kosher salt + 2t Kosher salt 1T Mustard Seed 1/4t Turmeric 1t celery seed 1t pickling spice mix 4 cloves garlic, crushed Bring to a boil. Simmer 4 minutes. Slice cukes and put them in jars. Dump liquid to cover and seal. I get 2 jars out of this one, but that's not useful info since I don't recall the size of the jars. -Justin "Lisa C." wrote in message ... Great idea! I'll look for that. My most recent batch turned out mushy
like you mentioned below. Tasted great, but very mushy. My too-sweet significant other said that he saw nothing wrong with that, who said they had to be just like everyone else's... Very kind of him!!
