Reverse roles are fun. Most of the best gourmet chefs are men and on a
ship the men do the laundry. Nevertheless, it sounds like you have
undertaken quite a task with your backyard project. Hopefully, some of
those orchids will thrive outside. Can't expect the same here in the
southern California desert. Just placed an additional shade cloth on
the greenhouse and have temperature under control at about 82 degrees
with the swamp cooler going -- almost all warm growing stuff --
Cycnoches, Catasetum, Catanodes, Mormodes, Coryanthes, etc.

There are some plants in nature that perfer not to grow in the full
sun.
When their environment changes (storm damage, logging, death of the
surrounding trees) these plants will grow toward the shade and the
more
hospitable environment.

I don't know the culture for your dendrobium but it is not
unreasonable
that
it would grow toward the best environment.

Now, go out and enjoy your patio and quit working so hard!
