I believe.

Looking for to establish if what of above ground is edible (picled).

The roots are called garmar ગરમર
The stems above ground are called ડાળાં (branches) DaaLaan.

"It has four angled stems"

that fits with how I know ડાળાં (branches) DaaLaan.

roots getting pickled and eaten is noted but not the stems. If they
are my ડાળાં (branches) DaaLaan.then I have eaten them pickled over 60
years back.
