I'm having trouble finding Muriate of Potash now. Everywhere seems to
have Sulphate of Potash instead but that is only 48% soluble (if I
remember the label properly).

I presume this is better than nothing but is it safe to use?

Yes, just takes a little more than the Muriate of Potash.
