I have been lining my stream with good old fashioned quick crete. It's been
running for about a month now, with no noticeable effects to critters or
water params.

You could use a premix concrete mix or a mix of portland cement with sand
and gravel. Do not use mortar mix or masonry cement, as these have extra
lime added to make them more plastic, easier to use in laying brick and
block. Portland cement will have some lime water generated as it hydrates,
but not as much as the masonry cement. The lime has a pH of about 13, so if
you use a lot of it, your pond pH will go up significantly. Allowing it to
fully hydrate by keeping it moist, which can take months, though most
hydration will be done within a week, then allow the concrete to air dry for
a few days to get air in the capalaries, and the amount of lime that will
get out is minimal.
