Somehow, your news client is misbehaving - you should be able to
configure it to cut out the separator (two dashes and a space) and
everything below it automagically - and it should put chevrons () in
front of quoted text, and put in an attribution (The top pair of lines
of this post is an attribution).

The main problem with leaving a sig-separator and sig in a post is that
many/most newsreaders will cut out everything from the sig-separator
downwards, and when you hit 'Reply' the text you're replying to has
vanished...
