River cottage Dandelion recipe?
 
Hi

Did anyone see the River Cottage programme last week, the one in which Hugh
Fearnley-Whittingstall makes dandelion & burdock beer? Can you remember how
much of each root (it just looked like a small handful) and whether he used
anything else apart from sugar and yeast? The other recipes are on the
website, but can't find that one.

I just tried the River Cottage burdock beer recipe. Had a bit of a scary experience.

I halved the recipe. And instead of beer yeast, the lady in the shop didn't have any so sold me champagne yeast. Followed the recipe halving the ingredients to make a small portion.

After 8 days tried opening a bottle, fortunately in the sink with a kitchen towel wrapped around it (I heard that this was good practice, just in case). And then there was a pop like a gunshot and beer on the ceiling. (Although the half inch of beer left in the bottle tasted good!)
I have now put the other bottles in a box in an upside down old bin in the garden, waiting for them to explode on their own.

I don't quite know what the problem was. Was the big mistake using champagne yeast? Or should I have waited a lot longer before bottling, perhaps putting them through a 2ndary fermentation?
Whatever the cause was, I never what this to happen again. And I am sorely tempted to switch to plastic screwcap bottles, because you should be able to tell when they are under pressure (they'll bulge), and they won't threaten to cut you up with broken glass.

I will however try this again (modifying the recipe to be flatter, and probably in plastic bottles...) because it really did taste good.
