When to stop eating leeks and parsnips?

When to stop eating leeks and parsnips?

Neither have gone to seed yet.

The hard middles crack out of the parsnips.
The outsides still seem OK.

Some of the leeks have a solid core - but it seems OK to eat.

Any advice?

Carry on eating them until they aren't nice to eat any more!
That's what I do anyway. The leeks are rapidly running to seed now.

And they make superb cut flowers when they do.
Just put a few drops of bleach in the water to take away the smell.
