watery potatoes
 
Why are some potatoes (not new season) watery in the centre? There is no evidence before
cutting open but when I do the centre is transluscent and after cooking is watery, soft
and squashy.

Lifted before mature.
Grown in alkaline soil (they prefer acid soil)
Potash deficient soils.

How does one know when they are mature? I thought they could be picked at any time so long
as they were big enough.
