Default Yacon


Yacon is like a Jerusalem artichoke, but produces massive tubers,
which are separate from the small tubers used for propagation.
Those appear to be for water storage, not food, and so are very
much like a halfway house between a watermelon and a Jerusalem
artichoke. Yes, seriously. They seem to make a good salad, but
I can't find any other use for them.

It's very frost sensitive, but the deeper parts of the storage
tubers last well in the ground (I still have some) - the growth
tubers and top of the storage tubers were killed by the winter
frosts. What I don't know is whether it will create its storage
tubers fast enough to use for summer salads, but shall experiment.
If not, I shall give up on it.
