Can you teach an old dog?

I just eat my first (grafted) tomato--inspiring!

I have a dog rose vigorously growing through concrete cracks. It won't go
away; is it feasible to graft something nicer on?

Yes.
The roots of the Sweet Brair are commonly used by rose grafters as
rootstock because of their vigourousness. So i would think Dog Roses
could be used in a similar way. Go ahead and graft on whatever rose
you want. Personally I think Dog Roses are beautiful and Sweet Briars
even more so because the leaves are apple-scented.
