Default Pruning standard currant

I've just bought a couple of standard redcurrants from a closing garden
centre. They are about 6ft tall container-grown. They have not been pruned
for several years.
How and when should I do this?

McHoy's Practical Guide to Pruning says:

' work methodically on each main branch in turn. Shorten the summer's
growth from the tip of each main branch by half, and then cut back
sideshoots to within one or two buds of the main stems to encourage the
production of fruiting spurs. In time old and unproductive branches will
have to be cut out , but leave vigorous young sideshoots to take their
place.

Pruning redcurrents grown 'on a leg' is apparently a bit more difficult
than doing normal ones, but it doesn't say why!
