When is Sweetcorn ripe?

when ripe, the kernel will seep a creamy liquid when you press on it with a
fingernail.

or at least that's what google said ;-)

When you push a fingernail into a kernel and get a creamy/yellow liquid (not
clear). If you wait too long they go hard and become maize, fit for cattle
feed.
We got ours picked, blanched and in the freezers today , all except for the
two we ate tonight.

When the "cornsilk" begins to look a bit worse for the wear. You only need
to look at the silk without opening the husk leaves.

Only two? Good lord! Two cobs of corn are just an appetizer, a
warmer-upper, before more serious ingestion of the stuff starts.

Technically, when the seeds have become bone hard.

Culinarily speaking, they are edible from almost the moment they are
formed, so you may simply wait until the seeds have developed enough
for your taste. With care, you can feel their size through the husk,
if that is the word I want.

I did not know it was possible to eat only one per person.

Many thanks for your answers to the above question. When the rain stops
I shall go out and squeeze a few cobs.

Well they weren't the only things on the plate, there was the pile of runner
beans (Polestar, Painted Lady and Desiree) and the Dauphinoise potatoes
(Romano) besides the chicken schnitzels. :-)

To offer such dishes, when there's fresh corn-on-the-cob at hand,
is indicative of depraved tastes. :)
