From a culinary point of view, I have heard that crows are the avian
equivalent of foxes.

Tough and skinny. I expect the young are about as tasty as young rooks though.

adult crows are inedible. long country tradition of shooting the
fedglings off the branches when they leave the nest (pour candlewax into
..410 paper cartridge for a makeshift bullet!). These are apparently
delicious tho' I've never tried them: so good, in fact, that they made
it into a nursery-rhyme!
