I have a Hebe Sutherland in my garden which has grown way too fast and is
going to be too big for the area it is in. Can I prune it? It's flowering
at the moment so I suppose now is not a good time. I did have another of
the same plant which I took up yesterday and planted in a pot to try to
restrict its growth.
Any advice would be appreciated.

I would let it do it's flowering first, if only so you can enjoy it.
Generally speaking, if you don't know specifics, just after flowering is the
time I choose to prune anything. This means it has the next year to recover
and sort itself out for flowering again next year. Cut it well back, so it
can then grow again to the size you want. The old gardeners saying is "
First the knife, then the growth"
