They did dry out a bit one week we were away, could one dry spell
leave them permanently drooping?

Which is it, Mike? We usually find watering restores ours quickly but
some of the larger headed ones can become too heavy for their stems
and need a bit of staking.

Just looks to me as if it needs pruning, also try using something like
tomato feed on it next year to firm up the new growth.
