.. When the pods are still fully
green, the peas are sweet but slightly smaller than after the pods start
to
discolor and the peas get slightly larger but not nearly as sweet. I'm
interested in finding out at what stage to pick them to fix cooked and
creamed as a dish.

The best I can offer you is the way I found out, as tastes vary........pick
