The vine should be pruned quite severely in late January after some frosts.

[Having said that, we get so few frosts in coastal Suffolk I always tend to
leave the pruning too late through waiting for a 'good frost'.]

The aim is to prune the vine when it is dormant; after it has stored this
year's food from the leaves and stems, but before it starts pushing sap up
the stems again to feed the new spring growth.

As to pruning technique, I would recommend Google or a specialist grape
book.
