Once the ground's been dug, what do I do next? Just leave it until
spring
and let winter break the clay down or can I plant it up with something

improve the soil

You could also cover the soil with farmyard manure and during the winter
the manure will beneficially leach its way into the soil.

or even get a crop over winter?
