I'd like an outdoor thermometer that records the maximum-minimum temps;

That's on my list as well. Got it down to around £25 for an indoor digital
display with up to 3 external sensors with built in frost alarm and max-min.

So I stay warm inside and see what temp it is outside without actually going
out there.
