Then cut the new spike if the old spike is blooming, so that it will
grow the flowers larger and hold them longer, or just cut all the old
spikes and wait for the newest one to grow, but best of all is not to
be greedy (or be greedy depending on how you look at it) and cut them
all so that it will produce another that will be worth the wait.
