| What's the best size to pick them?

Small. 2" across for eating raw, or a bit more for cooking.

| Do they store well ?

Not really.

| Any suggestions on how to prepare and cook them ?

Like (globe) courgettes. Sliced in salad or in fingers for dipping,
or cooked in any of the usual ways.

| Are they peeled like, say, butternut squash ?

Not if picked young enough.
