By cutting back it will not damage the plants, BUT could lose food for late
moths as weather is still warmish, also losing seed heads for overwinter
bird food.
That said it is your chioce. You could always place a birdfeeder somewhere
convenient for the wild birds and feed them that way, fat balls are useful
going through Autumn and Winter.
Incidentally "OT" Red Hot Poker is a wonderful bird food plant for spring,
Good to see birds hanging from the flowers feeding.
