You can safely prune your avocado tree back to the stump and it will regrow
happily. It is done often in the industry. Avocadoes are strong trees.

The only problem is that you would then need to regraft the shoots with
budwood of the variety you cut off (or another variety of your choice).
Anyway, you can surely prune it back as much as you like. Now is not an
ideal time due to the fact that you probably have fruit set on the tree
already. But you wont hurt the tree if you do it now, and there is still
plenty of time for regrowth this year so that you can prune it properly
after harvesting is over. Get the chainsaw out and rip into it.
