Never had any problems with it.

If you have a delicatessen which gets regular supplies of chilled stuff
- smoked fish, olives, pies, etc, they usually come with strips of
polythene pockets of that gel, hydrated, and frozen.

Every deli I have come across just throws these away.

What you don't want to use immediately you can dry out for later use.
