I don't see any reason why a mint wouldn't be able to survive those
conditions, however, I am concerned that it might turn into a difficult to
manage weed. It is nearly such in moist temperate climates. Some thymes
might do well, others seem to prefer lower humidity.

I tried sticking fresh mint stalks in the soil but it didn't take
root.

I managed to grow lavender & Cat Mint from Australia in pots but they
died eventually. Lemon seems to be growing well though I doubt they
will flower. The fragrant leaves are enough for cooking curries.

I bought some live herbs from the supermart, i.e. Sweet Basil, Thai
Queen Basil, Celery Leaves & Onion Chives.

The local nurseries do sell peppermint, lemon balm, rosemary & cat
mint seeds but they don't seem to germinate at all.
