Celery - Favorite recipes?

I *love* celery soup. Chop up an onion and a whole stalk (all the ribs,
that is) of celery. Sautee them in butter and/or oil with salt and
pepper until everything's softened. Add good chicken stock or some other
cooking liquid to cover, bring to a boil, and simmer for 30 minutes,
adding more liquid if necessary to keep them covered. At the end,
either puree or don't, depending on your preference, and then add heavy
cream.
