I have embarked on a project to develop Alder (Alnus) as a grain crop.

According to Wikipedia, Alder catkins are edible and high in protein but
have a bitter and unpleasant taste. It says nothing about the edibility of
the seeds.

Do you have any evidence that the seeds are edible and that there is a
market for the crop?

As for your actual questions, they are so specialised that I doubt whether
you will get a flood of useful answers on a Gardening newsgroup.

Good luck for the wedding.
