which brings me to the question of why one
cucumber out of seven would be extremely bitter?

I have had the same experience. I don't know why it happens, does anybody
have any good information?

I have grown sweet peppers and been surprised by the occasional hot
outliers . I thought of cross pollination but the following URL
suggests maybe not.
