Default Kale

I've heard that if kale is cut back it will grow more readily, but
does this apply if it has been cut back to almost the base? It has
since started to regrow, but the green growth is not recognisable as
kale.

Kale is a biennial, it is supposed to last two years before going to seed.
In the process you get long knobbly stalks where the leaves have fallen off
or been harvested. If you cut those stalks the plants will send out new
growth from various places. The size and habit of the new growth may be a
little different but it is still kale and edible.
