Am I missing something he why on earth would you want to water
hydroponically grown plants?

With the exception of plants like watercress, hydroponically grown
plants are not grown in standing water. The others are grown in
gravel or similar, and that is flooded with nutrient-enhanced
water at frequent intervals.
