Default [IBC] Defoliating rowan/mountain ash

I have an shohin rowan/mountain ash (Sorbus aucuparia) that I plan to
exhibit this fall. Even though it went from a big pot to a shohin pot
with almost 90% root reduction and little water the leaves is bigger
than ever and its growing like crazy. Is it possible to defoliate rowan
ash, has anyone tried it?
