Tabasco peppers
 
Wait until they turn red? (they do turn, don't they?) Or pick them
while still yellow-green, a week or so after they stop growing? These
will be for eating fresh. At least the first one...

It's a matter of taste, try both and see which you like more, or if you can
tell the difference.

Very nice when red. Take care when picking, they tend to fall off the
stalk easily.
