Default Clay Soil

Would adding ag-lime to my red clay soil be beneficial, or just cause it to
turn into brick?

Neither. Lime does nothing to the texture of soil. It only adjusts the pH.
You need to add lots and LOTS of organic matter. Getting a soil test would
also tell you if lime would be beneficial in adjusting your pH upwards.
