Default transpiration-removal of leaves

Before transporting a plant from one pot to another why is it best
remove some leaves? In relation to transpiration

It's seldom necessary when transplanting from one pot to another,
but if a plant has been dug up from the ground, or otherwise lost
a lot of roots, the leaves may transpire more water than the remaining
roots can replace, and the plant will wilt.
