harvested peppers
 
hey all-

i just harvested a bunch of banana peppers, a couple of jalepenos, and one
(but soon to be very many) habeneros.

so what do i do to keep them fresh until i eat/cook w/ them? do i put
them in a zip-lock in the fridge? plastic container in/out of the fridge?
help????

Use a veggie-bag and put them in the bottom of your fridge.

They won't stay fresh very long---just a few days. I think a zippy bag in
the fridge would be your best bet. OR...
Consider slicing and putting them in jars of 3 parts vinegar/1 part water
and putting them in the fridge. They'll last a long time that way. Or, if
you have a whole bunch, look into really canning them so they don't have to
occupy the entire fridge. That's a LOT of work, though.
If you have a vacuum sealer (or a friend with one!), chop or slice the
peppers, vacuum and freeze them in small batches, and they will be perfect
for making chili or even pico de gallo all winter.

gallons of jalapeno slices already this summer, and whose pepper plants are
still blooming.
